About Me
Welcome to FineWineTime, where passion meets palate.
My name is Seb, and I’m the founder of Fine Wine Time. I’ve spent the past decade immersing myself in the world of wine and I’ve had the privilege of working professionally in the industry across a myriad of roles. What began as a personal fascination has evolved into a lifelong pursuit to share the beauty, complexity, and stories behind truly exceptional wines.
By trade, I’m a paramedic, but wine has become my true calling. The spark was lit during university when a housemate (then a sommelier, now a winemaker) began bringing home remarkable wines after work. Tasting those opened my eyes to a world far beyond the supermarket shelf: layers of place, history, people, and artistry in every bottle. From that point on, I was hooked.
I threw myself into learning, buying and tasting widely, exploring lesser-known varietals, and completing WSET Levels 2 and 3. My professional journey began in a boutique wine shop, and since then, I've worked across multiple retail environments, run guided tastings, hosted masterclasses, and helped clients navigate everything from everyday wines to cellar-worthy investments.
Today, I continue to deepen my expertise working in a respected wine store, where I assist in curating and delivering wine education. I’ve found particular joy in demystifying wine for others, breaking down the barriers that can make it feel exclusive or intimidating. Wine is for everyone, whether discovering your first bottle of Beaujolais or building a vertical of Barolo.
At Fine Wine Time, my mission is simple: to share truly great wines with people who are curious, passionate, and looking for something more. Wine is not just something to drink, it’s a lens into culture, geography, craftsmanship, and human connection. It brings people together and transports us to places we’ve never been.
Whether you're a seasoned collector or just beginning your journey, I’d love to help you explore the extraordinary world of wine.
My Goal
My goal is to showcase incredible wines, winemakers, as well as give you a better understanding of wine. I want to do this by creating self sustaining community events that bring people together. Wine is for everyone and can be enjoyed by anyone at any price point. Let me show you how good it can be, teach you how to get the most enjoyment out of it, how to buy it, give you a better understanding of how its made and why it tastes the way it does. Perhaps most importantly, bring you the joy I have come to know!
